Fresh Veggie and Shredded Chicken Salad

I love using leftovers for quick and easy meals that allow me to create something completely different than it was before.  When I make my shredded chicken salad I like to use the meat from a mindfully medicinally herbed whole chicken that I roasted the night before that creates a fresh and flavorful salad.

Prep Time: 10 minutes

Serves: 2 


  • 3 cups 50/50 spring mix lettuce, divided

  • 2 hard-boiled eggs, sliced

  • 5 mushrooms, sliced

  • ½ cup shredded cheese

  • 1 tomato halved and then sliced

  • 1 cup shredded roasted chicken

  • ½ cup favorite salad dressing


  1. Evenly divide the lettuce, shredded cheese, mushrooms, and tomatoes on each plate.  

  2. Add the hard-boiled eggs, top with your favorite dressing and enjoy!
